As for tips on making macarons, they are as follow:
1) Process the almond meal and icing sugar together to get the same consistency (sifting is not necessary but is encouraged) 2) Don't overbeat the egg whites 3) The batter must be folded until it reached a ribbon like stage 4) Let the macarons dry and form a skin on top before baking 5) When baking have another tray under the one with macarons. This is to prevent over cooking the macarons
