Recipe - Vietnamese inspired baked Chicken

Ingredients

6 Chicken Maryland, filleted/ 1 whole bulb of garlic, minced/ 1 1/2 knobs of ginger, minced/ 1 stalk Lemongrass, minced/ 1 tbsp potato starch/ 5 tbsp Fish Sauce/ 5 tbsp Sugar/ Juice of 1 lemon

Method

In a deep bowl place all ingredients together- rub each chicken piece well with the herbs and sauces. Marinate refrigerated for 3 hours (or best left overnight)
Preheat over to 200 C and line two trays with baking paper. Place three chicken pieces on each tray.
Bake at 200 C for 15 minutes (or less, keep an eye on it so that it does not burn)- then turn down to 180 C and baking for another 35 minutes.
Let to cool before serving

Recipe for Chocolate Buttercream

Ingredients

250g Butter (Unsalted, at room temperature)/Dash of Vanilla Extract/ 1 cup Icing Sugar/ 1 cup Cocoa/ Pouring or thickened Cream (Substantial amount)

Method

In a mixing bowl, cream the butter and vanilla until light and fluffy
Sift in the icing sugar and cocoa- then beat until a paste is formed (Start it on a slow speed to prevent the whole kitchen being covered in cocoa powder)
Gradually beat in some cream until a spreadable consistency is achieved.
Keep refrigerated until use. Before use, let it sit a room temperature until mixture is of a spreadable consistency.

Note: This can be used to frost chocolate cake or cupcakes.

Jam Drops

Ingredients

250g Butter (salted, at room temperature)/ 1 cup Caster Sugar/ 1 Egg/ Dash of Vanilla Extract/ 2 cups Plain Flour (or All purpose)/ Strawberry jam, substantial amount

Method

Preheat oven to 180 C, line two baking trays with baking paper
In a mixing bowl, cream butter and sugar until light and fluffy. Then add the vanilla and egg, and beat until well incorporated.
Sift in the flour and mix until combined.
Scoop 1 tablespoon of the dough onto the baking tray and continue to do so until no dough remains. (Makes about 20)
Make an indent in the top of each dough, then fill it up with 1/2 tsp jam.
Bake for 18-20 minutes
Leave to cool on the tray before removing. Keep stored in an air tight container

250g Melted Butter/ 1 cup Caster Sugar/ 5 Eggs/ 1 tsp Vanilla Essence/ 2 1/4 cups Self Rising Flour/ 4-5 Ripe Bananas, mashed (2-3 Extra for decoration)/ 1 tsp Ground Cinnamon

Method

Preheat oven to 180 C, line baking tray with baking paper
In a mixing bowl, combine melted butter, sugar together with a electric mixer. Then beat in one egg at a time till well combined before adding the next.
Add the vanilla essence and flour, then mix until smooth.
Mix in the mashed bananas and cinnamon. Pour into the baking tray then decorate with extra bananas.
Bake for 40 minutes or until skewer comes out clean
Let to cool, then store in an airtight container

Recipe

250g Melted Butter/ 3/4 cups Caster Sugar/ 90g Mung Bean Flour/ 4 Eggs/ 1 cup Self Rising Flour/ 2/3 cup Dessicated Coconut/Icing Sugar (substantial)

Method

Preheat oven to 160 C and line a bread baking tin with baking paper
In a deep mixing bowl, add melted butter, sugar and mung bean flour. Mix until well incorporated.
Using an electric mixer, beat in each egg separately into the batter.
Sift in the flour, fold. Then fold in the dessicated coconut.
Spoon the batter into the prepared tin.
Bake for 35 minutes (Note: Different oven bake differently. Check the cake by putting a knife through the center. If it comes out clean, then the cake is done. If it comes out with batter, bake for another 5 minutes)
Dust the top with some icing sugar.
Keep in an air tight container. The cake will keep for 2-3 days.
