Apple Pie

Fit for an autumn evening by the fireplace

I extracted this recipe from taste.com.au and made some slight alteration to it. The little one had two slices which was unexpected as he is not a fan of sweet foods~ For weightwatchers, this recipe is butter-free so don't feel guilty in having another slice.

Ingredients
2 cups All purpose flour/ plain flour
½ cup Self rising flour
Pinch of salt
2 tbsp sugar (castor sugar)
2/3 cup olive oil (extra virgin oil, cold pressed)
1 egg, separated


1.2 kg apples, peeled and thinly sliced
1 tbsp fresh lemon juice
½ cup sugar
1 tsp ground cinnamon (mixed spices are just as good)
1 tsp corn flour

Method
1. Combine flour (both kind), salt and sugar together. Give it s good mix.
2. In another bowl, combine olive oil, egg yolk and ½ cup cold water. Stir, and add to the dry ingredients.
3. Knead until smooth, then divide into two portions and refrigerate for 30 mins
4. Preheat the oven to 180 C
5. Roll out one portion of the pastry to line a 20-22 cm round pie dish. Fill with the apple filling**
6. Sprinkle with some more cinnamon and sugar.
7. Roll out remaining pastry and place over the apples. Press the edges to seal and trim away the extra bits.
8. Make a slit in the centre of the pie to ensure circulation of heat. Decorate with the remaining pastry
9. Bake for 40-45 mins or until golden brown

**Apple filling:
Combine the sliced apples, lemon juice, sugar and cinnamon in a pot. Cook on low heat (there should be juices excreted). Add in corn flour and stir until a thick paste forms. Stand aside to cool.
